Ingredients: 150 grams of celery 150 grams of carrots 100 grams of onions 100 grams of tomatoes 100 grams of zucchini 30 g of Parsley 300 grams of coarse salt 4 peeled garlic cloves 80 milliliters of white table wine 2 tablespoons extra virgin olive oil 10 grams of Sage 10 grams of Rosemary Preparation: Clean, wash and coarsely chop all the vegetables. Put in a pot all ingredients except the oil Bring to a boil and simmer on low heat for 30 minutes, stirring occasionally. Put the boiled vegetables with all the liquid in a food processor and process until you get a homogeneous paste. Add the oil, mix well and put again in the pot on low flame. Let reduce until very thick. Spread the mixture on cooking paper and let it cool completely. With a very sharp knife cut into cubes and wrap in aluminum foil. If you prefer you can pour the mixture in an ice-cube tray and keep them in the freezer or pour it in a jar and top it with olive oil before closing it.
