A recipe for extremely tasty vegetarian burgers and a way to make your own ketchup. Ideal for summer days and very easy and fast to prepare. So tasty it will please everybody, particularly childrens. The artisan ketchup will surprise you. The ketchup can be put in a jar and kept in the fridge for long time by topping it with a thin layer of olive oil.
Ingredients for the burgers :
2 medium potatoes (about 300 grams)
1 box of drained boiled chickpeas
2 egg yolks
pepper and salt
extra virgin olive oil
Ingredients for the Ketchup
250 g of pureed tomatoes
80 g sugar
60 g vinegar
For the chickpea burger recipe : boil the potatoes skin on in unsalted water for 30-35 minutes from the boil. Drain, peel and crush them. Whisk the chickpeas coarsely and then knead them with the potatoes, the egg yolks, 5 chopped sage leaves, a tablespoon of oil, salt and pepper. If you want the colour to approach more closely the colour of meat and for a stronger flavor add to the dough some drops of soy sauce . Shape the dough in 4 burgers. Cook them in a pan with a drizzle of oil for 15 minutes, turning them halfway through cooking.
For the ketchup: Melt the sugar in a saucepan over a low heat for 1-2 minutes. Turn off the heat and add the vinegar, stirring well. Turn on again the fire on low, to dissolve the lumps that have formed. Add the tomatoes and 50 g of water and cook for 8-10 minutes. Turn off and adjust the salt. Let it cool.
